Chef Luke’s Crispy Brussel Sprouts

Once we opened our Tasting Room & Kitchen in Oceanside two years ago, one of our most requested dishes has been, without question, our Crispy Brussel Sprouts. The flavors that Chef Luke has incorporated into this dish will leave your mouth tasting the sweet, the savory, the tenderness, and the crunch. We’ve lost count as to how many servings we’ve dished up over the years which is why we thought it was the perfect time of year to share Chef Luke’s recipe with you.

We joined him in Oceanside and followed each step to make sure we didn’t miss a beat. We have laid out everything below so you would be able to make this a new family staple for Thanksgiving for many years to come. We’re happy to bring a part of the Orfila Kitchen into your own home.

Ingredients:
• ½ lb. of Brussel Sprouts (washed, trimmed and cut in half)
• 5 strips of Bacon (diced)
• ½ cup of Dried Cranberries
• ½ cup of Nuts (your preference, but we use sliced almonds)
• Crumbled Plain Goat Cheese
• ¼ Balsamic Glaze
• ¼ Olive Oil
• A splash of white wine (we love our Chardonnay)
• A pat of butter (salted or unsalted, your choice)
• Salt & Pepper to season

Directions:

Preheat the oven to 450 degrees. Trim, wash and cut the Brussel sprouts in half and blanch them in boiling water for 1 minute. Transfer them to an ice bath and then drain. Lay out the Brussel Sprouts and the bacon on a baking sheet and drizzle them with the olive oil and season them with salt and pepper.

Roast the Brussel Sprouts and bacon in the oven for approximately 15 minutes until they look nice and toasted. You want to achieve a dark golden brown color on the outside to make sure they are nice and crispy. Heat the butter in a nonstick skillet and transfer the Brussel sprouts and bacon from the baking sheet to the skillet. Add the splash of white wine once they are hot and sizzling. Drizzle in the balsamic glaze and heat until nice and bubbly.

Transfer the ingredients from the skillet to your serving dish and add the remaining ingredients (dried cranberries, nuts and crumbled plain goat cheese). Top with micro greens for garnish if you’d prefer and serve immediately.
